Food Will Never Be The Same Again...


So unfortunately Aspen does have Celiac Disease. I am feeling kind of overwhelmed with all that entails. I would love recipes or ideas from anyone who know someone with Celiacs.
Daren seperated his shoulder playing in a raquetball tournament. Not good timing if you know what I mean.
The babies and I are still doing well. A mother's job is never done, as they say.
I am really enjoying the nicer weather and the fresh air with the widows open.

I was once told that I might be allergic to gluten, and only made it without it for 5 days. That was 10 years ago, and since then, there really has been a lot of new things developed to help people.

My friend Danielle has a severe case of it, and has a bunch of resources on her blog. She even had to bring her own sacrament bread wrapped in foil to church for the priesthood to put into the sacrament tray that went to her row. http://taintors.blogspot.com/

Oh man I am sorry to hear that. I was friends with a mom who's little boy had it too. Seemed like they were able to adjust ok. Once you get used to adjusting her diet you will get used to it;

No worries, My sister is roomates with two ciliacs and they can give us all the info. you need as far as recipes go. One of her roomates is in Japan with my sister right now visiting, so I'll tell her to upload some recipes on her blog if they are not up already so you can have them!

I'm sorry to hear that Aspen has this disease. I have a friend that just moved into our ward whose child has that too. I'm going to ask her for recipes & advice (or I"ll give you her email when I get it). Good luck

I'm so sorry to hear about this. It's hard when you have something else added onto everything else. It was really hard for us when Emily was diagnosed with Diabetes. I thought my life was over, that Diabetes was all I was going to be able to do. However, we have adjusted. And Heavenly Father has also increased our capacities.

Do you remember LaDawn Dalton? She lives in Prescott Valley, did you ever know her? She has 5 kids - 1 daughter and 4 sons. All four of the boys have Type I Diabetes. I believe that one of the boys (and maybe also she) has Celiac. If it's ok with you I will send your email address to her. I'm sure that she would be able to help you.

I am sorry! I need to do some research just to find out what it is, so obviously not much help with recipes. I am glad you did get a diagnosis, do you feel a little relieved or mostly overwhelmed. I will give you a call! Love you guys, hope Darren feels better!

How funny, I was going to also mention LaDawn Daltons name,(like Shannon) her youngest son also has this condition. I'm sure she could hook you up with tons of tips and recipes.

Sorry to hear the sad news about Aspen. Once you get more comfortable with how to prepare her food, hopefully she'll be much happier as well. Hang in there, you're doing great!!!

I wish I could leave you with advice, but unfortunately we are a glutenful house. I grind flour on a weekly basis here. I do know a friend who was allergic to gluten and found lots of resources such as Soy flour, bean flour, rice flour, etc. to be very helpful. There is also a flourless bread you can make using cornmeal, although the name escapes me. Best of luck to you in this.
